“Instant” Smashed Red Skin Potatoes
Today I have a guest blogger – my sister Jackie! These are her creation – an easy way to make smashed potatoes without all that messy boiling water nonsense! Great as a side, or even an easy lunch option. This recipe serves 3-4 people, or you could halve it if you wanted.
- 4 red skin potatoes (medium size)
- 1/4 cup low-fat milk
- 2 tbsp Butter or butter substitute like Brummel & Brown
- 2 tsp Ranch dressing seasoning
Using a butter knife, cut a few slits in each potato and placed on a microwave safe plate.
Microwave the potatoes according to your microwave directions (I have a baked potato button and I push it about 1&1/2 times, it ends up being about 10-12 minutes for 4 potatoes. Or about 2-3 minutes per potato).
After the potatoes are cooked through place them in a large bowl. Use a potato masher to smashed them up a little bit.
Next add about 2 tbsp butter and 1/4 cup milk. Smash them together a bit more adding more milk if they seem too dry.
